"Small one-off projects" configuration

We have a couple of groups that are going to be doing a couple of 1-3month projects with different deadlines. They all have an Overall Theme, but I don't want to create 20+ RTC/RQM projects. So I am thinking one project, and multiple teams/categories.
My main issue is project A might be due April 15th, project C&D might be due on April 20th, project E on April 30th. Does this mean different timelines, or am I missing an easier solution to implement this? The main thing with this is that it's almost Team Lead led, not management. So access is small, and they just want status, not anything major...
