Stange behaviour with multiple servers

We have a live server and a test server. The test server is duplicate of the live server which we snapshot every now and again.
I have eclipse loaded and a connection to the live server, and I am connected to project area X
I delete the live server connection and Project Area X disappears. I have no open windows in the main area.
I create a new connection to the test server and also connect to project area X.
I open up Project Area X and start adding a new work item so I can test it there before putting it on the live server. I click save and find that I cannot open the Project Area X to access the work items to create a new work item.
I close down eclipse and re-open it, open Project Area X and then try to create this new work item. I find it's not in the list.
I delete the test server connection and connect back to the live server and find out I have updated the Live project area X not the test one.
How could something like this happen?
