You can add/edit workflows from Project Areas --> Select Project --> Types --> WorkFlow Section

As far as I am concerned, any item type in Jazz products that support workflows can always only ever have exactly one workflow. You can define custom workflows and change the workflow for the item type as described by Karthik. If you change the workflow for a type, you change it for all items of that type and you could loose the current workflow state for all those items.
