We have created a custom work item type that we plan to use for items generated from a development plan, however when creating work items from a development plan it produces a 'Story' by default.

Is it possible to create them as our new work item type or do we need to change them all manually after creation?

the default workitem type is the FIRST one in the list of types..
edit the process config and make yours the first (no other way)
