It depends what you mean by "get back to previous versions".
If you have baselines from an earlier point in time, you can load those to view the entire set of (now unchangeable) artifacts from that point in time, and compare them to current. Use the Configuration Context menu to specify which configuration (stream or baseline) you want to see.
If you created another stream of requirements, the two streams evolve in parallel and you can switch between them.
At this time, you can't roll back changes in a stream to revert artifacts to a previous version. However, if you have a baseline with the desired versions, you can branch a new stream from the baseline and then deliver the previous artifact versions into the desired stream.

DOORS NG and RQM have built-in configuration management, and links between versioned requirements and versioned tests are resolved automatically to point to the right version at the other end of the link. Read about global configuration management in the product documentation. There are a number of good videos on youtube that provide an introduction.

When I say versioning requirements, I want also manage and show a previous version of a requirement or of a floder requirement.
Can I set the file back to a previous version?

Configuration management of requirements provides development streams and baselines of requirements (optionally with tests, models or source files in the same configuration context with global configurations).
Yes you can get back to prior versions of requirements (and links to other things).
