Hi,

what will happen if I rename an existing category? I.e. many existing
work items have been filled against it.

The work items will point to the renamed category (these are referenced by item id, not by name).

Can the same be said of releases? I'm hoping our work items will automatically pick up the change to the release which is used in the Found In field.

Yes, same is true for releases (so rename at will :-).
