Is it possible to add a custom field to a work item which gives you the team members as predefined choices?
aka a custom named field that acts the same as the 'owned by' attribute...

I found the presentation that Andr Wienand gave at RSDC but the interesting part I think is the demo, which is pretty much not available in the slides ;)

Could you please open an enhancement work item and describe the use case in more detail.

At the moment it is not possible to create a custom attribute of type Contributor.
