Possibility to show only some attriutes of WorkItems based on the role assigned in EWM

There's no way to hide visibility of individual attributes based on a user's role, team membership, permissions or other.
You can restrict visibility of entire work items in several ways, and you can make individual attributes read only, and you can also hide attributes on the UI based on workflow state, but the values will still be visible in reports and possibly other UI formats.
