I know every artifact has its own audit history, but I am looking for an audit trail of changes made to the project properties. I want to know who deleted certain attributes for example.

There is no audit trail of project properties changes. It is not possible to get rid of attributes unless they are not in use by any artifact and unless you have permissions to do so. What back end updates have there been?
