How do we configure these with our own values ? or Hide them .. I don't want them on my test cases !

It pains me to say this, but right now you're stuck with those and there's no realistic way to change the values.

Has this changed in 3.0? Will we be able to modify and/or remove these categories in RQM 3.0??

Depending on the version of RQM you've installed, the Test and Activity trigger is an option in the system properties, where it can be turned on and off ... if you turn it off, you merely create your own category and place in it the values you want.
