It is possible to map other LDAP fields, such as telephone, organization or city?

The config "User Property Names Mapping" only accepts "userId,name and emailAddress" values ?

I would say no.

The Jazz user only have these three editable attributes, and you cannot customize it with extended attributes. Even there are many more attributes on the LDAP side, there is just no place to map them to.
