I cannot find a way to display work items of type=Project Status with the Status field displaying Text string. I can create a query with the Status field displaying first, but the display says GREEN instead of showing a green ICON. Any ideas?

Did you check if there were icons assigned to the different values of the Status field, in addition to the label? This is defined in the work items configuration rather than the dashboard. You can find this by opening the project editor in the eclipse client, and in the Process Configuration tab, open Project Configuration > Configuration Data > Work Items > Enumerations, select your Status field.
