On the Work Item Category tab for the project area, I am unclear what it means when timeline <any> is picked.

That says that the specified mapping from category to project area
should apply for all timelines, rather than just a specific selected one.

Since a given team area can only be assigned to a single timeline,
making a mapping from a category to a given team area be true for all
timelines seems to be a bit pointless/confusing. Perhaps the process
team could comment on why this was thought to be a useful option?

Note: I would withdraw this criticism if the enhancement that requests
that it be possible to associate a single team area with multiple
timelines were implemented.
