Process modification gotchas?

My team (and several around me) use Scrum and Mike Cohn's User Stories and Agile Estimating and Planning approaches to requirements and Agile project management. I want to get going using RTC/Jazz, but there is no built-in support for this particular process approach.
I realize that I can tailor one of the existing templates or create one from scratch (groan), but I'm not likely to get it right the first (or second or...) time. And I don't want to wait to get going until it is "right". Can I adjust and "reapply" the process template to an existing project? Am I asking for trouble and heartache if I take this approach?

Hi Millard,
you can modify a project area's process specification as you go, that should work without problems. When you remove a value from a work item enumeration (e.g., severity/priority) you might first want to search for all work items with that value and change it (e.g., select the work items in the Work Items view and use the context menu to change the value).

Christof already mentioned that modifying the project area's process as
you go is the right thing to do. With M5, we know support to create a
process template based on a project area. I.e. once you know your
process works and you want to make it available to others you create a
template from your project area.
