For only one Work Item type, not all.

 There is no built in capability to select only one work item type (that I am aware of). You may have realized that the mail notification is also configured by each user.


It is possible to create a follow up action or an asynchronous task that would send an e-mail notification and I believe you could use the new App Connect connector to EWM  to create such a capability.

You can create a set of default subscribers by using a Default Value attribute customisation and attach that to the Subscribers attribute on the work item type. Then the list will be added as subscribers automatically for that WI type and you can then configure your email to receive subscription notices.
