On the iteration planning page, i would like to be able to have my Backlog, my current sprint and the next sprint all in one screen.

Is this possible?

According to this wiki page, https://jazz.net/wiki/bin/view/Main/QuickPlanner502iFeature , the iteration planning view can display the following: backlog, the parent iteration, the selected iteration, and the next two sequential iterations. Additionally, the title of each lane also shows a start and end date of the iteration.

Maybe the version of QP you have is not the latest.  However, I don't think it is configurable other than the selection for the iteration you are interested in.
