I want to sort first by parent and then by ID.  I specify "Show Links" but parent does not appear in the sort columns list.

I don't think you can sort by any links. It does not make sense at all.

This is useful to help show "traceability" information.  The ability to sort by parent ID let's you see epics, stories and tasks as they relate to each other, much like the traceability view in a Plan.

Well, if you can sort by the ID, would you like to sort by the other attributes of the parent WI? It becomes complicated quickly.

ID is fine. It give you a way to visualize work item relationships
