Is there any any history or audit available for the customizations of work items in RTC? For e.g. I would like to see who has made changes to a defect workflow.

You can only see this in the history of the Process Configuration. See https://jazz.net/library/article/503. It will allow to compare, but it is an XML compare nonetheless.
