Configuring the guess category button to a default value everytime it is hit

So you don't want it to actually attempt to guess the category, but rather to set the default category?
If so, I don't think it's possible to configure it this way.
You can however look at this forum thread that describes setting a default Filed Against (this has nothing to do with Guess Category though).
