Setting Date Values (TimeStamp) on Custom Attributes or Actions??

I've seen some other questions about setting a date field value when a state is set, such as Verified Date with Verify State is set....

There are several dates set in the out-of-box work items types, such as Creation Date (I guess set when a record is first created), I see a Modified Date (is that set on some Modify Action?), Resolution Date (this seems to be set when Resolved State or Resolved Action Occurs??)   So how can I create a custom attribute and do the same thing, such as an attribute called Start Work Date and have it set the date when the work item gets set to In-Progress? 

is the only way to set a date field based on when another fields value gets set by using a custom script??
