Support for bulk subscriber editing is requested in work item 185803.  Also, I've also just submitted work item 216609 asking for "When instantiating a work item template, provide mechanism for prompting for whether to subscribe user to all generated work items".  You can add a comment to either or both work items, indicating your interest/support.

You cannot avoid the automatic subscribe, but you can just edit the work item (either before or after first saving it) to remove yourself as a subscriber.
