How to customize build notification emails by Rational Team Concert

 Using RTC v5.0.2 is there a way that the email being sent by builds be modified to our own likings or specific format for a project?

There is no way currently to customize the format of the email notification.
See the work items in the 'Links' tab of: [CCM] Improve Build email notifications (233478)
Specifically I think the request you are looking for is: Template-based capability to format emails sent as build notification mails (198238). Please add additional comments to that work item if your use cases are slightly different, and up-vote the work item.

Also, as additional information for readers, there are 2 places in the UI where Build email notification can be currently setup.
1. On the build definition itself. In the Build Definition editor, open up the editor menu (down arrow at the top left) and select "Edit Configuration". Now select 'Other' and then check "Email Notification".
2. Defined at the project area level (which will apply to all build definitions in that project area). In a Project Area editor (in Eclipse) select the "Process Configuration" tab. Expand 'Project Configuration' / 'Configuration Data' / 'Build' / 'Email Notification'
