Can you create a baseline retrospectively in Doors Next Generation v6.0.0?
In previous versions of Doors Next Generation, you were able to select a date and time when creating a baseline. Now, in version 6.0.0 (with Configuration Management NOT enabled) I seem to only have an option to create a baseline for the present time. Is there a way to create a baseline in the past?

Interesting question - but I believe the answer is No. A read-only copy of the 'current' content of the stream (Note: you will only have 1 (default) stream if CM has not been enabled and configured for your project) is taken when you create the baseline. You can then make changes to the project and later compare the stream to the baseline (or compare one baseline to another).
