Is there anyway to display multiple project areas in a single dashboard?

It depends what type of information you want. The dashboard as a whole is not scopable to multiple projects, but some individual viewlets can where it makes sense. For example, in 2.0, you can customize the work items viewlets to show a query from any project. If a viewlet allows it, it would be in the settings area of the viewlet.
